SUGAR PIEPastry for 9" pie:2 eggs 2 cups brown sugar; packed 1 egg yolk 2 tbs flour 1 cup milk 1 tsp vanilla pinch of salt Roll out pastry and fit into 9" pie plate, trim and flute edge. In bowl, blend sugar, flour and salt. In separate bowl using electric mixer, beat eggs and yolk till frothy; beat in milk and vanilla. Stir egg mixture into sugar mixture till smooth. Bake in 400F oven for 10 minutes. Reduce to 350F and bake for about 35 minutes or till crust is golden brown and filling is set. Let cool on rack. |

LEMON BREAD1 cup butter1 cup sugar 2 eggs; beaten 1 1/2 cups flour 1 tsp baking powder pinch of salt 1/3 cup milk 1/2 cup walnuts; chopped fine 2 tsp lemon rind; grated 1/4 cup sugar and 1/4 cup lemon juice Cream butter and sugar and add beaten eggs. Mix well. Mix flour, baking powder and salt. Add alternately with milk to the egg mixture. Stir in nuts and lemon rind. Grease pan well and pour batter into it. Bake at 350F for about 50 minutes or until toothpick comes out clean. Poke holes into the bread with a fork while hot and brush on the 1/4 cup sugar and 1/4 cup lemon juice that has been blended together. |

PIE CRUST2 cups flour1 cup Crisco 1/2 cup warm water 1 tsp salt Put all ingredients in a bowl - knife - Place on floured table. Kneed for a minute. Roll out. Half mixture and roll out 2 crusts. |

Tricia's Griddlecakes1/2 to 3/4 cup milk2 tbs melted butter 1 egg 1 cup white flour 2 tsp baking powder 2 tbs sugar 1/2 tsp salt Combine milk, butter and egg in a mixing bowl and beat lightly. In a separate bowl, mix the flour, baking powder, sugar and salt. Combine the two bowls. Cook on a hot greased griddle. For a little variety try adding vanilla extract or cinnamon or thinly sliced bananas or whatever floats your boat! |
