Green Beans with Sundried Tomatoes


1/3 cup sun-dried tomatoes
1/4 cup water
1 pound fresh green beans, cleaned
3 tablespoons water
4 tablespoons light Italian dressing


In a small bowl, soak tomatoes in water. Set aside. Snap off ends of green beans and place in covered casserole dish along with 3 tablespoons water. Microwave on High* for 4 minutes. Stir and continue microwaving on High for an additional 4 minutes. Let stand for 2 minutes. Drain water from sun-dried tomatoes and dice into small pieces. Mix tomatoes with salad dressing in a small bowl. Set aside. Drain beans. Pour dressing over beans and toss.

Makes 4 to 6 servings.
