When Amber Coon isn’t practicing “vegan outreach” on American college campuses or volunteering at her local spay and neuter clinic, she can be found behind the counter at a falafel shop in Syracuse, NY.

Two years ago 22-year-old Amber and her boyfriend decided to road-trip from Seattle down to Tijuana over the summer.

Only problem was, they didn’t have a car.

So the couple planned the trip usingcraigslist, heading south as rideshare opportunities presented themselves.

Six or seven rides later, they were sipping margaritas in the Mexican sun.
